T-Bone steak is a classic, premium cut of beef known for its signature T-shaped bone that separates two distinct cuts:

  • On one side, the tenderloin (same cut as filet mignon), buttery and tender

  • On the other side, the strip steak (same as New York Strip), firmer and full of beefy flavor

This combo makes the T-bone the best of both worlds—you get both tenderness and bold flavor in one steak.

T-bones come from the short loin of the cow and are best cooked grilled, broiled, or pan-seared, typically medium-rare to medium to keep both sides juicy. Because of the bone and the variation in thickness between the two sides, cooking evenly can be a bit tricky—but totally worth it.
